HOLIDAY COOKIE PLATE

Entertaining is fun in every season; but this time of year gives us latitude to do things we might not otherwise. In this instance, Lions lie down with Lambs on this holiday cookie plate.

Lions are cut-out spice cookies with chocolate-Armagnac frosting manes; Lambs are cut-out chocolate cookies with vanilla frosting, so there are two slightly different recipes.

Spice Cookie Dough Ingredients

All Purpose Flour -- 2-3/4 cups
Baking Powder --  3/4 tsp.
Salt -- 3/4 tsp.
Ground Cinnamon -- 1 tsp.
Ground Ginger -- 1 tsp.
Ground Allspice -- 1/2 tsp.
Ground Nutmeg -- 1/2 tsp.
Ground Cloves -- 1/4 tsp.
Unsalted Butter -- 1/2 pound (2 sticks)
Egg -- 1 lg.
Makes three dozen.

Directions: Sift together dry ingredients. Cream butter and sugar until fluffy with mixer fitted with paddle attachment. Add egg and vanilla and mix well. Add flour mixture and blend slowly until just combined. Chill overnight. Roll out dough 1/4-inch thick and cut out cookies. (Swedish cookie cutter, $2.99) Bake on ungreased cookie sheet at 350 degrees F for 13 minutes, or until edges just begin to brown. Cool on rack. Using a 4" offset spatula -- or a butter knife -- apply "manes" of chocolate frosting and finish with chocolate sprinkles.

Chocolate-Armagnac Frosting Ingredients

Confectioners Sugar -- 2 cups
Dutch Process Cocoa -- 1/2 cup
Soft Butter -- 2 tblspoons
Light Corn Syrup -- 1 tblspoon
Armagnac -- 2 tblspoons or more

Directions: Sift sugar and cocoa together. Beat in butter, syrup and just enough Armagnac to achieve spreadable consistency.

Chocolate Cookie Dough Ingredients

All Purpose Flour -- 2-1/4 cups
Dutch Process Cocoa -- 1/2 cup
Baking Powder -- 3/4 tsp
Salt -- 3/4 tsp
Cinnamon -- 1 tsp.
Unsalted Butter -- 2 sticks
Egg -- 1 lg.
Makes three dozen.

Directions: Follow method for cut-out spice cookies.

Vanilla Frosting Ingredients

Confectioners Sugar -- 2 cups
Soft Butter -- 2 tblspoons
Vanilla -- 1 tsp.
Whole Milk -- 2 tblspoons or more

Directions: Whisk sugar, butter, vanilla and just enough milk to make spreadable consistency. Apply frosting over "wooly" part of lamb, and finish with white sprinkles.
